Roti is a round, unleavened flatbread native to the Indian subcontinent traditionally made from stoneground whole wheat flour, and water that is combined into a dough.
A way to increase the nutritive value of rotis is to combine different kinds of flour.
Here's a simple recipe I use:
1/3 cup whole wheat flour
1/3 cup chickpea flour
1/3 cup millet flour
1/2 tsp Salt (optional)
Combine these into a dough using yogurt and puréed spinach (raw or blanched, either way is fine) instead of water.
Here's a really good link on how to knead the dough and roll out the rotis: https://pipingpotcurry.com/roti-chapati-indian-flatbread/
