Pizza
If you grew up in NY, better yet, grew up on Long Island, you have in your DNA the ability to know and understand what good pizza is. No matter where you are now, all pizza is judged by your early years in the Pizza Parlors. Can your memory taste back to Christiano’s, so many pies and pitchers. So good, Billy Joel wrote a song about the place.
My 2nd pizza jewel would be a train stop on the way to Florence, Poggiebonsi. My only regret is I did not stay long enough to eat more.
It is documented that during the Renaissance of Italy (1434), people from China immigrated and worked in Tuscany, changing the course of Italian Cooking. Now you take 5000 years of Chinese culture in Joy’s DNA, put her on a farm on the western slope of one of the largest volcanoes in the world, the freshest, just picked from our land ingredients, and you have a master piece of Pizza.
If you still live on Long Island or never did, none of this makes any sence. Enjoy your pie.
Buon Appetito
